Featured Recipe: Mushroom Stroganoff

Cookie Dough Ice Pops

Stroganoff originated in Russia as a beef dish served in a rich sour cream sauce. And though there are many versions of the original recipe, I prefer this plant-based one, made with rich porcini mushrooms and lots of fresh herbs.

Serves 4

  • 2 large shallots, peeled and minced
  • 4 cloves garlic, peeled and minced
  • 2 teaspoons minced thyme
  • Salt and freshly ground black pepper to taste
  • 1 teaspoon minced rosemary
  • 1 pound portobello mushrooms, stemmed and cut into large pieces
  • 1 ounce porcini mushrooms, soaked for 30 minutes in 1 cup of hot water that has just been boiled
  • ½ cup dry white wine
  • 1 pound whole-grain fettuccine, cooked according to package directions, drained, and kept warm
  • 1 cup Tofu Sour Cream (recipe follows)
  • Chopped parsley

Place the shallots in a large skillet and sauté over a medium heat for 8 minutes. Add water 1 to 2 tablespoons at a time to keep them from sticking. Add the garlic and thyme, and cook for another minute. Stir in the salt and pepper, rosemary, and the portobello mushrooms and cook for 10 minutes, stirring occasionally. Add the porcini mushrooms, and their soaking liquid, and the wine. Stir, and cook over medium-low heat for 20 minutes.

When the stroganoff is finished cooking, stir in the sour cream. Add the cooked noodles and toss well. Serve garnished with the parsley.

Tofu Sour Cream

Use this healthy dairy alternative in any dish that calls for sour cream. Serve it with baked potatoes and fresh chives, with tacos or enchiladas, or with Mushroom Stroganoff.

Makes 1½ cups

  • 1 package extra firm lite silken tofu, drained
  • 1 tablespoon lemon juice
  • 1 tablespoon red wine vinegar
  • Salt to taste

Combine all ingredients in a blender and puree until smooth and creamy. Chill until ready to serve.

a must have recipe book, but don't expect too many pictures
I recently watched "Forks Over Knifes" and got enough inspiration to try learning to cook using more healthier vegetable-centric ingredients. I received this book a few days ago and started cooking.

As a reference point, please keep in mind that I'm a typical guy who used to eat 20oz Rib-Eye stake and considered mashed potatoes my daily serving of vegetable. Besides, vegetables are what my food ate.

The book starts with explanation of the differences in the vegetable ingredients, fundamentals of cooking such as preparing your stock & sauces, then quickly moves to breakfast, salads, soups, stews, chilies, grilled, wraps, stir-fried, baked, casseroles, and desserts.

Unlike other cookbooks, all of the above use vegetable as primary ingredient using cooking methods from around the world. For example, I enjoy miso soup with my sushi, but never knew that miso sauce was made using mirin and paired with rice.

Not sure if the food tastes bad because of all the mistakes, or if the food just tastes bad.
This cookbook is riddled with typos and mistakes...like, omitting whole entire ingredients from the recipe. Publisher came out with a statement saying they are going to fix mistakes in future printings, but they should take the current version off amazon immediately. Not fair for consumers to spend money on something that is a total amateur publishing. As someone who works in publishing, this is really offensive. I know what it's like to proofread, and it's not brain surgery. I can understand one or two typos here and there, but i've only made 4 recipes so far and every single one had an error. And unfortunately, the ending results of everything i've made have been mediocre. Nothing really BAD or terrible, but nothing i'd make again or offer to guests. If this book can't win over a vegan like myself, it's certainly not going to win over any meat-eaters. Very disappointed. I was really excited and hopeful for a Forks Over Knives revolution, but it's not going to happen anytime soon...

After viewing the FOK film and thinking that this would be a good direction to go, I bought this book because of the positive reviews. I should have looked at the 1-star ones. After trying about 7 of the recipes, I have to agree with several of those thumbs-down assessments: the recipes are poorly described, often failing to give measurable amounts of some ingredients, and give no indication of how many servings they make. What's even worse is that, after thinking that I'd now be able to move to a super-healthy diet that tastes really good, most of what I've tried is sub-par at best, and some are outright DISGUSTING (try the no-cheese sauce if you want to experiment; both my and my wife found it reminiscent of septic tank odor! And I wasted a nice bunch of broccoli I poured it on). My verdict: the author ought to go to cooking school, test his recipes on an average group of people, only put in ones that get at least a B, and learn to write recipes that give the needed information...

Great book, packed with ideas that are simple, easy to prepare and making healthy eating a breeze!
I first became aware of the Everyday Detox blog, and hence the book, when reading another book by the Author Tara Styles; which referenced a super quick and easy raw fudge recipe. I tried the recipe, was hooked and ordered a copy of this book!

The first thing I loved about this book is the neat compact size which makes it easy to read, reference and use. And as soon as you open the cover you are greeted by gorgeous pictures of some of the featured recipes. As another reviewer noted, this book does not feature an abundance of photos if that is what you look for in a cook book; but they do not exactly skimp on the photography either, and for me, I would honestly have a few extra recipes and they are certainly packed in this book!

The book opens up with the authors story - and like many others who found their way to a whole foods lifestyle, she grew up on a diet abundant in convenience foods, fast food meals and processed foods, only to hit those college years...

By far the best cookbook I have purchased in a long, long time. It is so informational, and the recipes are beyond delicious and SIMPLE! I am a working mom of a 2 and 5 year old therefore I seek out the most straight forward recipes that are nutritious as well. I just received this book and can plan a whole week with it. So far, I have made the Chinese cabbage salad and it is out of this world! As are the smoothies and dressings. Never again will I buy another bottled salad dressing - no matter how "clean and healthy" it claims to be. Cauliflower fried rice was also on the menu several nights this week - even my 5 year old loved it!
Overall, the cookbook is so versatile and works with all different lifestyles - the recipes can each be tailored to be vegan, vegetarian, omnivore, etc. Best of all, the ingredients aren't obscure. You most likely already have them, or they are easy to find at your local grocery store.

I absolutely LOVE this book
I absolutely LOVE this book. Full disclosure, I was one of Megan's recipe testers for this book, so I've already tried a bunch of her new recipes. And I've consistently made the ones I had access to for about a year. The majority of recipes in her book are new, however she did include some of my absolute favorites from her blog (by coincidence - I guess my picks were very popular with her other readers!). I am ecstatic to have my old and new favorites in one place. I am confident that I will use this book multiple times per week.

From what I've tested, my favorite recipes are the Mexican Butternut Pilaf and the Cheesy Jalapeño Casserole. I am also OBSESSED with her basil vinaigrette. Her cheesecake and vanilla cupcakes were also a hit with my friends (and they aren't the healthiest of eaters). All of Megan's recipes are gluten free, and she gives tips to make many recipes vegan and/or dairy free.

I have been waiting for years for Megan to write a book, and...

Betcha Can't Buy Just One!
I have been moving toward a full paleo eating style for the past year and a half and I literally own every "paleo" cookbook available on Amazon. I wish I had this cookbook when I was just getting started. It is the very best of my whole collection -- and that is saying something because I really enjoy a couple of the others. Well Fed is absolutely chock full of deliciousness. Every recipe WORKS. It turns out as described and wows my family. I am doing a "cookup" right now to stock my fridge and pantry for a week of healthy eating -- something I originally learned from John Berardi over at [...] -- and the ideas in this book are going to take my weekend cooking ritual to an even higher level of healthiness and diversity.

I have never before cooked every recipe in a cookbook. I am committing that I will be making every single recipe in this book before the end of 2012. Yes - it is that good. In fact, I have never reviewed any of the many books I have purchased from Amazon,...
Great recipes, poor quality binding
I have been cooking with this cookbook for a couple of weeks and can confidently say it is "best of breed" in the paleo world. With all the blogs and cookbooks out there you will encounter a lot of clutter, but if I were to recommend one paleo cookbook to a friend (based on content) it would be this one. Highlights include:

1. Each recipe includes a section with logical side pairings and variations. Possibly my favorite feature - I feel like improvisation in the kitchen can be a bit harder on the paleo diet and the variations presented in the book can be applied to other recipes, so I'm learning fundamentals I can use in the future.
2. Recipes are easy to understand and follow. Minimal prep time. This is a recurring theme throughout the book. The author clearly understands the value of a weeknight recipe.
3. The recipes are delicious and creative. The "best grilled chicken you will ever have" is exceptional. Loved the apples in butter dessert/side. I have...
A word on the binding [Updated with actual review of contents]
I read the other reviews regarding the fragility of the spine, and the first thing I did when it arrived today was to bring it to OfficeMax and have them remove the glued spine and replace it with a spiral bind - it cost me $3 + change. The kid who bound it leered at the quality of the spine - he sliced about an eighth of an inch in, and there was zero glue left on the pages. According to him, a sure sign of bad binding.

Anyway, all cookbooks should be spiral-bound!

UPDATE - What I think of the actual book:

Oh. Wow.

We are eating like ROYALTY! I did a cookup last weekend, kept us going throughout the week. I made scotch eggs - delicious. I made mayonnaise - TOO easy, it takes 5 minutes! Yesterday I made cottage pie with mashed cauliflower, hard-pressed to tell the difference from the real thing. I've got some jicama slow-cooked from the weekend that I'm going to use for the home fries recipe some night this week.
